Kumra shaak diye gorur goshto / Beef curry with pumpkin leaves

    This is a gravy filled meat dish with pumpkin leaves. It is spicy with a tang of various spices. Serve with pulao or rice.

    • 1 kg beef
    • 1 kg pumpkin leaves
    • 2 teaspoons turmeric powder
    • 2 tablespoons chilli powder
    • ½ cup onion paste
    • 1 tablespoon coriander paste
    • 1 tablespoon garlic paste
    • 1 tablespoon jeera paste
    • 2-3 cardamoms
    • 2 bayleaves
    • 2 cinnamon sticks
    • ½ cup soybean oil
    • 1 tablespoon ginger paste
    • Salt as required
    • Water as needed

    1. Chop the beef in to small pieces. Wash and rinse the pumkin leaves and slice them into small pieces.
    2. In a cooking pot, marinate the pieces of beef with all the ingredients (except for the pumpkin leaves) . Put the pot on heat and stir the mixture well. Once the spices have mixed wel, pour 1 cup of water. Cook with lid on.
    3. Once the water has dried out a bit, add the spinach leaves to the mixture and stir it again.
    4. Pour a little bit of water and put the lid on again. Make sure that the heat is set to medium.
    5. Once the gravy has become thicker, put the pot aside. The beef curry with pumpkin leaves is ready to be served.
