For 4 person: Potato 1/2 KG, 1 finely chopped onion, corriender leaves, Salt, Garlic 4-5 cloves paste, a small peace of Ginger, Pich of baking soda, 2 lump of Gram floor, Pinch of Cumin seeds and Pinch of Mustard seeds, Curry leaves, 3 table spoon Oil,
Pinch of Termeric, Green chilly as per taste
Take 2 lumps of Gram floor and add a pinch of baking soda and a pinch of salt into it. Pour some water slowley and stir the floor slowley to check the batter, form semi-solid paste of it and keep it aside till we make stuffing for it.
Take 1/2 Kg boiled potatos and pill off its skin. Mash them with the back side of bown to achieve required mashing level.
To make a spicy masala for stuffing: Take a piece of ginger, some garlic, green chilly, corriender leaves, pinch of salt curry leaves and grind it well in a mixer or khalbatta.
Take 2 tea spoon of oil in a pan. and Mustard seeds to it. When oil start heating seeds start Tempering then add pinch of Cumin seed and add finely chopped onion. fry it for a minute or two till it turns to redish color. add spicy masala prepared in above step & stir well.
Add mashed potatos to the mixture in the pan & stir well.
Keep it covered on a medium flame for a minute and switch off the flame. Keep the pan aside.
when a mixture in the pan sets cool after 5-10 minutes, form medium size balls for entire mixture & keep it in a plate (size : sligthly bigger than ladoos).
Now take a gram batter prepared in the step 1. Deep and cover one ball into the batter and deep fry it on heating oil. Fry till it converts it into brown color.
Serve the dish with Pudina+nariyal Chutney or Tamrind syrup.
