Tejal's Fluffy Medu Vadai.

    Yet again a fool-proof recipe! This time for the much complicated (to many) Medu Vadai. Some tips and tricks from me and you will have a restaurant style medu vadai at home! Bon Appetite!

    • 1 cup Urad Dal
    • 1 Tablespoon of Urad Dal (for roasting)
    • 1 Teaspoon of Rice (for roasting)
    • Salt as per taste
    • 6-7 Peppercorns.
    • 1 Teaspoon Bi carbonate Soda


    1. Soak 1 cup of Urad Dal for 4 hours.
    2. Dry roast 1 tablespoon of Urad Dal and 1 teaspoon of Rice and grind it in powder form
    3. After 4 hours, grind the Urad Dal in fine smooth paste along with salt and peppercorns . Add little water to get the mixture in a hard paste form.
    4. *this step is optional, but it will bring good results* After grinding the urad dal, keep it for 5-6 hours.
    5. After 5-6 hours, add the roasted urad dal & rice powder and soda to the mixture.
    6. And fry with any desired shape!

    You can instantly fry the medu vadai's after grinding the Urad Dal. However it is best if the mixture sits for more 5-6 hours, this will result in more fluffy medu vadai's!
