    About this recipe: After scorching summer heat, cold weather is indeed the time to enjoy and experience comfort. This is also the time when our appetite urges for something that will be satiated for our taste buds as well. Here is a recipe for delicious Crispy Chili Baby Corn to spice up your mood during winters:

    Ingredients

    • ¼ kg of baby corn
    • 2 small onions cut in cubes
    • 6 to 7 white portion of spring onions
    • 1 tbsp chopped garlic
    • 1 tbsp chopped ginger
    • 1 tsp soya sauce
    • 2 tsp vinegar
    • 1 tbsp corn flour mixed in 5 tbsp water (Try to maintain the measurement if possible for better results)
    • ½ tbsp. brown sugar
    • 1 large green capsicum, sliced
    • 1 ½ tbsp tomato sauce
    • 1 tsp green chili paste
    • Salt to taste
    • 2 tbsp of refined oil
    • For marinating
    • Marinate the baby corn with the ingredients mentioned below for at least 10 minutes
    • A large pinch of black pepper powder
    • ¼ tsp of ginger garlic paste
    • Salt to taste
    • 1 tbsp of corn flour mixed in few drops of water

    Directions

    1. 1 tbsp of corn flour mixed in few drops of water
    2. Thinly coat the baby corn in the marinade and shallow fry it in the pan until light brown.
    3. Remove the pan from then oven and keep it aside for some time.
    4. Take heavy bottomed vessels (I used the Indian Kadhai in my case) pour some oil into it and then add one after another the chopped ginger and garlic. Saute it on a high flame for about 30 seconds.
    5. Add chopped spring onion and sauté it for another 2 minutes. Then add to the pan the sliced capsicum. Stir fry for another minute or two.
    6. Add to the contents the green chlli paste, tomato paste, soya sauce, vinegar and brown sugar. Combine them nicely.
    7. Add the sauteed baby corn and toss it with the other contents on high flame for 3 minutes.
    8. Add chopped spring onion in the end and remove it from the oven.
    9. Serve it hot as a mouthwatering appetizer.

    Shortcut

    You can use extra virgin olive oil for cooking in place of refined oil as well.
