Sponge Mishti ( Sweet Cheese Ball )

    Sponge mishti is a very popular sweet in my country . It is made with fresh cheese ball boiling them in sugar syrup.Its very nice in taste and celebration of any good news and occasion is quite incomplete without this sweet in our culture. Here I gave a simple way to make it for the beginners and bachelors.

    • 1. Milk 1.5 litre
    • 2. Vinegar or lemon juice 3 table spoon
    • 3. Sugar 1.5 cup


    1. Pour the milk in a pot and heat it upto the boiling. When the milk starts boiling pour the vinegar or lemon juice into the milk and stir it to make the cheese.
    2. Take a small piece of cotton cloth , place the piece of cloth on a strainer and strain the cheese on it. Wash the cheese under running cold tap water and then dry it squeezing the cloth. holding all the ends up squeeze the cloth with cheese very well so that all the water came out from the cheese.
    3. Now take the cheese out of the fabric and knead it very well with palm till it becomes smooth like a dough and no lump is left. Now take a small portion from the cheese dough and make a small smooth ball ( the size of the ball will be like a marble and make sure that there is no crack on the ball ) . you can make 8 to 10 small balls from the cheese you got from 1.5 litre milk .
    4. Take 1 litre of water in a big pot and melt the sugar in it .If you want you can add a bay leaf in the syrup. When the sugar syrup starts boiling add on all the cheese balls in it and put a lid on . keep the heat medium and let the balls boil in the syrup for 15 minutes . After 15 minutes you will see that the balls are double in size and your sponge mishti is ready to eat.


    Take a big pot so that the cheese balls get enough space to boil. Don't boil too much ,otherwise the cheese balls will become harden when they are cooled down.
