Ultra-chilled Cous-cous salad

About this recipe: For those hot-and-heavy summer afternoons! it is healthy and filling, and making it is easy as punch.


  • 2 Cucumbers - Diced into small pieces
  • 1 Tomato - Diced into small pieces
  • 1 Lemon - for juice
  • Walnuts - 7-8 - Broken into small pieces
  • Couscous - 1/2 cup
  • Any bhujia/namkeen e.g. aloo bhujia - 1-2 tbsp - optional
  • Rock salt
  • A little black pepper
  • Green Chillie slivers
  • a pinch of Salt for cous-cous


  1. In a saucepan, add 1 cup of water and bring to a boil. Add salt and stir.
  2. Add couscous and remove from heat and allow to sit for about 5 minutes.
  3. Drain, if necessary and fluff with a fork. Leave aside for some time to cool.
  4. Now - just mix everything and enjoy!


You can mix just about anything in this salad - experiment a little bit with it every time you make it.
