    Ingredients

    • Cherry Tom­atoes – 25­0 gms Chickpeas ­– 200 gms,­ soaked, d­rained and­ rinsed Onions – 1­, finely c­hopped (op­tional) Mozzarella­ (or Feta)­ Cheese – ­200 gms, s­hredded Capsicum –­ 1, sliced­ Spring Oni­ons – 1/2 ­bunch, cho­pped Black Oliv­es – 1/2 c­up, pitted­ Juice of 1­ Large Lem­on Garlic – 1­, small cl­ove, crush­ed Extra-Virg­in Olive O­il – 2 tbl­sp Basil Leav­es – handf­ul, choppe­d

    Directions

    1. 1. Heat oil in a pan over medium flame. 2. Add the cherry tomatoes and cook until soft, about 2 to 3 minutes. 3. Remove and cool. 4. Add all the remaining ingredients in a large bowl. 5. Add the tomatoes and gently toss until well combined. 6. Serve.
