rice kheer

    Kheer is a Indian dish made by boiling rice, broken wheat, or vermicelli with milk and sugar; it is flavoured with cardamom, raisins, saffron, cashew nuts, pistachios or almonds.     • Rice 1/4 cup
    • Full cream milk 4 cups
    • Sugar ( to taste) 1/4 cup
    • Pinch of crushed cardamom
    • Sliced almonds 2 tbsp
    • Sliced pistachios 1 tbsp
    • Saffron 6 strands
    • Ghee 1tsp


    1. Soak the saffron strands in one tablespoon of warm milk .Keep aside
    2. Wash rice, changing water until the water appears clear.
    3. Melt the ghee in a frying pan add the rice and stir-fry for 2 minutes.
    4. Boil the milk in a deep non-stick pan.
    5. Add the rice and reduce heat. Cook, stirring continuously, till the milk reduces to one-third of its original quantity and the rice gets cooked.
    6. Add sugar and mix well.
    7. Add the cardamom ,almonds, pistachios and saffron milk and mix well. turn off the heat.
    8. As kheer cools of will become thicker in texture.
    9. Kheer can be served chilled or warm.
