PARSLEY POTATO 400 grams baby potato 500 ml oil for deep fry 20 grams parsley, chopped, fresh 20 ml olive oil 1 teaspoon garlic, finely chopped 1 teaspoon white pepper powder ½ teaspoon sugar ¼ teaspoon salt
Peel, wash and boil the baby potatoes in salted water. Fork it and deep fry it in hot oil till golden brown in colour. Drain it and keep it aside on an absorbent paper.
In another pan heat olive oil add chopped garlic sauté it till transparent in colour. Add ½ parsley and fried potatoes sauté it now season it with salt, sugar and white pepper powder. Now take it out and serve it hot with the garnish of chopped parsley.
