400 grams paneer (cottage cheese) 500 ml oil for deep-frying 50 grams onion, finely chopped 1 teaspoon ginger, chopped 2 teaspoon garlic, chopped 1/4 cup spring onions, chopped 4 nos green chilies, juliennes 50 Gms capsicum, diced 1 teaspoon soya sauce 1 teaspoon sugar 1 tbsp corn flour mixed with 3 tablespoons water 2 teaspoon salad oil (or cooking oil) ¼ teaspoon salt BATTER 02 table spoon corn flour 02 table spoon plain flour 1 tsp soy sauce ¼ teaspoon baking powder ¼ teaspoon salt
Mix all the ingredients for the batter in a bowl and make a thin batter by adding water. Coat the paneer pieces with the batter and deep fry in hot oil over a high flame till the paneer is golden brown. Drain on absorbent paper and keep aside.
Heat the oil in a wok and add the ginger, garlic, spring onion whites and green chilies and sauté over a high flame for 1 to 2 minutes. Now add onion and sauté it without changing the colour. Add the capsicum and sauté for a few more seconds. Add soya sauce, sugar, corn flour mixture (slurry) and salt and allow it to come to a boil. Toss in the fried paneer and mix well.
Serve hot with the garnish of chopped spring onion greens.
