Gajar Ka Halwa( CARROT HALWA)

    Gajar Ka Halwa is a sweet dessert pudding associated mainly with the state of Punjab in India. It is made by placing grated carrot in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly. It is a famous dessert which is favorite all over the Northern India.     • Carrots 8-10 medium
    • Cashew nuts 5-6
    • Almonds 5-6
    • Pistachio 5-6
    • Pure ghee 4 tbsp
    • Full-cream Milk 4 cups
    • Green cardamom powder 1/4 tsp
    • Fresh cream 1 cup
    • Sugar 3/4 cup


    1. Rinse, peel and then grate the carrots, either with a hand held grater or in a food processor.
    2. take a kadai, add all of the grated carrots.
    3. Add milk , stir the grated carrots and milk and keep the kadai on low flame.
    4. The grated carrots will cook in the milk and the milk will start to reduce.
    5. When the milk has reduced, add fresh cream sugar and powdered cardamom to the mixture.
    6. Stir and continue to simmer on a low flame till the mixture starts to thicken and reduce more. add ghee. stir well and continue to simmer and cook on a low flame
    7. Do keep on stirring the gajar halwa in between. towards the end, add the cashews, crushed saffron and raisins and simmer till all the milk is evaporated. switch off the burner.
