Aam ka aachar(Mango pickle)

    • Raw mangoes 1kg
    • Turmeric powder 2 tbsp
    • Salt to taste
    • Fenugreek seeds (methi dana) 2 tbsp
    • Fennel seeds (saunf) 4 tbsp
    • Mustard seeds(yellow sarson seeds ) 3 tbsp
    • Onion seeds (kalonji) 1 tbsp
    • Cumin seeds 1 tsp
    • Red chilli powder 2tbsp
    • Mustard oil 2 cups
    • Coriander seeds 2 tsp


    1. Wash and dry the mango, cut in small cubes with skin.
    2. Take a bowl add add turmeric powder and little salt, mix well and allow to rest for 3-4 hours.
    3. Drain out excess moisture.
    4. Spread the mango slices over dry surface and let it dry out preferably in sun light for 4-5 hours.
    5. Grind fenugreek seeds, fennel seeds, mustard seeds, onion seeds, coriander seeds and cumin seeds to a coarse powder.
    6. add red chilli powder and the remaining salt in the spice powder and mix well .
    7. Add half oil in spice powder and add mango pieces on it.
    8. Mix well to coat the mango pieces.
    9. Allow it to stand for three days. On the fourth day transfer it into a glass jar with lid on.
    10. Pickle should be ready in 4-7 days. Mango slices are nicely marinated with spices.
