Carrot ( Gajar ) Halwa

    Versatile dessert made of carrots and condensed milk. Can be had chilled or hot. Best served with vanilla ice cream.

    • Carrots, 750 gms )
    • Milk, 750 ml, (3/4 litre)
    • Condensed Milk, 1 tin (400 gms)
    • Sugar, 2 tbsp, or to taste
    • Raisins, 1 tbsp
    • Cashewnuts, 1 tbsp
    • Ghee, 1 tbsp
    • Cardamom Powder (from 4-5 pods)


    1. Wash the carrots thoroughly and grate them
    2. Heat some ghee in a kadhai and lightly roast the cashewnuts and raisins. Keep aside.
    3. Boil the milk and add the grated carrots. Cook till the carrots become soft, stirring every now and then. This takes about 8-10 minutes.
    4. Add the sweetened condensed milk and sugar
    5. Cook on low flame for about 25-30 minutes stirring from time to time
    6. Add ghee and cook for another 10 minutes or till the halwa leaves the sides of the kadhai
    7. Add the cardamom powder
    8. Garnish with the roasted cashewnuts and raisins
    9. Serve hot or chilled as per your preference. Best served with vanilla ice cream.


    Instead of the harder process of making and adding khova/khoya/mawa, I have used store bought Nestles Sweetened Condensed Milk.
