Bengaladumpa vepudu (aloo fry)

    This is a very simple yet delicious sabji. I love eating this with some rasam and rice on the side. You can use other vegetables such as plaintains or sweet potatoes too.

    Serves: 4 

    • ½ kg potatoes
    • ¼ cup oil
    • 2 teaspoons urad dal (skinned split black lentils)
    • 1 tablespoon cumin (jeera) seeds
    • ½ teaspoon mustard (rai) seeds
    • 4 dry red chillies
    • 1 sprig curry leaves (kadipatta/karavepa aaku)
    • ½ teaspoon red chilli powder
    • ½ teaspoon cumin (jeera) powder

    1. Peel and cut the potatoes into small cubes. Heat oil in a large frying pan. Add the urad dal, cumin seeds, mustard seeds, and dry red chillies. When seeds splutter, add the curry leaves. Fry for 30 seconds.
    2. Add the potatoes and salt. Stir fry till potatoes till they are cooked, about 20 minutes. Add red chilli powder and cumin powder. Fry for another 2 – 3 minutes. Serve hot with plain rice.
    3. Note: Another nice variation is to add 1 coarsely chopped onion and some sliced garlic cloves alongwith the potatoes.
