Easy French Beans

    French beans are quickly boiled and tossed in soya sauce with fresh ginger in this easy and healthy dish. It tastes fabulous with tandoori meats such as lamb.

    Makes: 4 

    • 500 g (2 cups) French beans
    • Salt
    • 2 cloves garlic, finely chopped
    • ½ teaspoon finely chopped ginger
    • 2 tablespoons soya sauce
    • ½ teaspoon sugar

    1. Line up the green beans in bunches and cut them in half crossways.
    2. Bring a saucepan of water to the boil, then add the beans and a pinch of salt and return to the boil. Reduce the heat and simmer for 3 minutes, or until the beans are tender.
    3. Place the garlic, ginger, soy sauce and sugar in a serving bowl and stir them together until the sugar has dissolved. Drain the beans, toss them into the dressing, then serve.
    4. Variation: substitute sliced carrots or baby corn cobs, adjusting the cooking time in Step 2 until they are tender.
