About this recipe: This versatile marinade works well for any meat or fish.


Serves: 8 

  • 100ml balsamic vinegar
  • 225ml orange juice
  • 225ml pineapple juice
  • 4 tablespoons olive oil
  • 2 tsp freshly ground black pepper
  • 1 clove garlic, minced
  • 3 green onions, finely chopped
  • dried crushed chillies or chilli sauce to taste

  1. In a medium bowl, blend the vinegar, orange juice, pineapple juice, olive oil, pepper, garlic, spring onion and chillies.
  2. Place meat or fish in a shallow glass dish or bowl, pierce with a fork a few times, and pour 1/2 of the marinade over it. Turn over and repeat. Marinate for at least 1 hour, up to 24 hours for best flavour.
