Cauliflower Stem Chutney

    This is an innovative recipe of mine. Generally everyone throws away cauliflower stems but they are the main ingredient here. And when my family members and friends tasted it they were so much amazed! It became their favourite. It is not very spicy and tastes excellent with rice, dosa and upma.

    Serves: 6 

    • 100gms cauliflower stem
    • 10gms tamarind
    • 8 red chilles
    • 1/4tsp turmeric powder
    • 2tsp til
    • for taste salt
    • 2tsp oil
    • 1/4tsp Udad dal
    • 1/4tsp Mustard seeds
    • 1pinch Hing

    1. Wash the cauliflower stem properly and cut it into small pieces.
    2. Soak tamarind and keep aside.
    3. Heat pan and fry til till it is brown.Remove it into a plate.
    4. Add 2tsp oil and heat it.
    5. Add 1/4tsp Udad dal and 1/4tsp mustard seeds 1pinch of hing and then add red chillies and fry till it spliters.
    6. Remove it into a bowl and add the cut cauliflower stem pieces in the pan and add the soaked tamarind and fry it till it is soft.If requierd add little water and cook.
    7. Then put the red chillies into a mixer jar and grind, then add the cooked cauliflower stem and til, and grind again.
    8. Then add salt and grind again.
    9. Remove it into the bowl with the Mustard and udad dal and mix well.

    Serving suggestion

    it tastes best with rice, dosa or idli.
