Lemon Cake Filling

    Use this fresh, lemon-y filling to decorate your next sponge cake. Works great as a filling for traditional lemon squares or piped into a cake sliced into half.

    • 3 eggs
    • 300g caster sugar
    • 3 tablespoons plain flour
    • 4 tablespoons lemon juice
    • 5 tablespoons icing sugar for decoration

    1. Whisk together eggs, caster sugar, flour and lemon juice until frothy.
    2. When your sponge cake has baked for 20 minutes, pour this mixture over it. Let cook for an additional 20 to 25 minutes, or until light golden brown.
    3. Dust with icing sugar and serve!
