Lemon Cake Filling
Use this fresh, lemon-y filling to decorate your next sponge cake. Works great as a filling for traditional lemon squares or piped into a cake sliced into half.

300g caster sugar
3 tablespoons plain flour
4 tablespoons lemon juice
5 tablespoons icing sugar for decoration
- Whisk together eggs, caster sugar, flour and lemon juice until frothy.
- When your sponge cake has baked for 20 minutes, pour this mixture over it. Let cook for an additional 20 to 25 minutes, or until light golden brown.
- Dust with icing sugar and serve!
