Surily's Chocolate Pudding

    I love this rich, decadent, not too sweet chocolate pudding. It's the perfect snack with a cuppa chai on a Sunday afternoon. This year we're making 'pudding Rakhis'- organic, edible rose petals with a dollop of pudding inside, fringed with mint leaves. 'Rakhi' is a big festival in our family, all my cousins and uncles come home, we tie them rakhis and then have a traditional Punjabi feast.

    Ingredients
    Serves: 6 

    • 1 cup white sugar
    • 2 tablespoons cornstarch
    • 1/4 teaspoon salt
    • 2 cups milk
    • 55 gm unsweetened chocolate, chopped
    • 2 egg yolks
    • 30 g butter
    • 10 ml vanilla essence

    Directions

    1. In a medium saucepan over medium heat, combine sugar, cornstarch and salt. Stir in milk and chocolate. Cook, stirring constantly, until chocolate melts and mixture thickens. Remove from heat and stir in egg yolks. Return to heat and cook 2 minutes more. Remove from heat and stir in butter and vanilla. Chill before serving.
