About this recipe: These no bake 'cakes' are fantastic served with jam, apple sauce or honey. Best of all, they're quick to make and low in fat! Makes a great breakfast in bed for mother's day!

Serves: 6 

  • 2 eggs, beaten
  • 250g apple sauce or purée
  • 1 teaspoon ground cinnamon
  • 2 teaspoons caster sugar
  • 125g flour
  • 75g wholemeal flour
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla essence
  • 75g raisins

Prep:10min  ›  Cook:7min  ›  Ready in:17min 

  1. In a large mixing bowl, combine eggs, apple sauce, cinnamon, sugar, flour, baking powder, vanilla and raisins. Form small cakes out of the batter.
  2. Heat a nonstick frying pan over medium heat, fry the cakes until both sides are browned, about 5 to 7 minutes.

Used different ingredients. I couldn't find apple sauce so I just used some honey. - 13 Aug 2010
