    About this recipe: Don't get intimidated by the addition of cocoa powder to this chicken dish! Trust me, it's good.

    Serves: 6 

    • 200g plain flour for coating
    • 2 tsp cocoa powder
    • pinch of freshly ground black pepper
    • 900g chicken mini fillets
    • 1 egg, beaten
    • 200g fresh breadcrumbs
    • 2 tablespoons olive oil for frying

    1. Mix flour, cocoa powder and pepper in a shallow dish or plate.
    2. One by one, coat mini chicken fillets in flour mixture, then dip in beaten egg, then in breadcrumbs.
    3. In a large frying pan heat oil over medium high heat.
    4. Shallow fry coated chicken pieces in oil until cooked through, approximately 5 minutes.
    5. Drain on kitchen roll and serve.
