    About this recipe: Tomato, mushrooms, bell peppers and cheddar on toast.

    Serves: 2 

    • 4 pieces of bread
    • 2 tablespoons peanut butter (optional)
    • 1/2 tsp minced garlic
    • 1 small tomato, thinly sliced
    • 2 mushrooms, thinly sliced
    • 1/2 red or green bell pepper, thinly sliced
    • 8 slices of mature Cheddar cheese
    • Dried mixed herbs or black pepper for seasoning

    1. Lightly toast the bread.
    2. Spread peanut butter on toast.
    3. Spread small amount of minced garlic on toast.
    4. Place slices of tomato, mushrooms and bell peppers on each piece of toast.
    5. Place a couple of slices of cheese on each piece of toast.
    6. Put the toast back under the grill for a few minutes, or until cheese has melted.
    7. Season with dried herbs and pepper to taste.
