Yum Tomato Basil Pasta Sauce

About this recipe: Thick, delicious sauce with tomatoes and basil, flavoured with mustard, garlic salt and bacon.


Serves: 2 

  • 3-4 tablespoons olive oil
  • 400g chopped tomatoes
  • 6-7 fresh basil leaves
  • 3 tablespoons of tomato puree
  • 1 tablespoon mustard
  • 1 tablespoon garlic salt
  • 1 to 2 tablespoons spicy sauce of choice
  • 1 to 2 tablespoons balsamic vinegar
  • 1 tablespoon dried herbs
  • 1 tablespoon cayenne pepper
  • 1 slice of lemon
  • 1/2 onion, finely diced
  • 3 rashers of bacon
  • 4 sundried tomatoes in oil (roughly chopped)

  1. Heat oil in a saucepan over low heat.
  2. Pour in the tomatoes, add the basil leaves and squeeze in a generous amount of tomato puree to thicken it up.
  3. Then add the mustard, garlic salt, Worcestershire sauce, balsamic, herbs and cayenne; mix thoroughly.
  4. Add the slice of lemon and diced onion. Simmer for 5 - 10 minutes over a low heat.
  5. When nearly ready to serve, pop the bacon rashers in the microwave for around 3 minutes until tender, yet cooked. Chop roughly and add to sauce along with sundried tomatoes.
  6. Cook for another 2-3 minutes and remember to take the lemon out before serving.
  7. Serve piping hot over some freshly cooked pasta.
