Achaari means giving a pickle flavor to a dish. Achaari Baked Chops is a tangy, lip smacking and a low calorie dish. Tastes great when paired with Afghani naan or plain boiled rice.
Dry roast the last six ingredients together, until aromatic. Let them cool completely on a separate plate. Grind them to a coarse powder. This is the Achaari Spice Mix.
Heat 2 tbsp oil in a heavy bottomed pan. when the oil is hot, add the chops. Fry till the chops turn golden brown and the liquid from the chops evaporate. Let them cool till room temperature.
In a bowl, whip the yogurt. Add salt, red chili powder, turmeric powder, and coriander powder. Add the ground achaari spice mix.
Also add the remaining oil, grated papaya,lemon juice,diced onions, and tomatoes. Add the chops (along with the oil and liquid,if any).Mix well so that the yogurt coats the chops well. Cover with a cling foil and leave it in the refrigerator for 3-4 hrs. It can also be marinated beforehand, and left overnight.
Preheat oven to 180 degrees for 10 minutes. Transfer the chops along with the marinade to an oven proof dish. Toss it in the oven for 25-30 minutes. Give it a good stir when halftime done.
Garnish with a mint spring or fresh cilantro .Serve hot with naan or palin boiled rice.
*Raw papaya is grated with the skin on. Do not peel the papaya before grating it. It is added to tenderize the meat and fasten up the cooking process.
*Diced colorful capsicums can also be added while marination to add color and flavor to the dish.
*Spice level can be adjusted according to taste. If you don't want the dish to turn out very spicy, red chili powder can be omitted.
*One tablespoon of Achar Gosht Masala can also be added for extra flavor.
