    About this recipe: Fruity, delicious and low fat- a combo that's always very very nice! Great for breakfast or chai time!

    Ingredients
    Serves: 8 

    • 3 ripe bananas
    • 1 mango, diced
    • 4 tablespoons veg or canola oil
    • 110g brown sugar
    • 110g pasteurized curd
    • 1 teaspoon salt
    • 1 egg
    • 1 teaspoon vanilla
    • 200g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 60g walnuts

    Directions

    1. Mash bananas and mango in a large mixing bowl. Add oil, yoghurt, sugar and salt. Mix well. Add egg and vanilla, beat again. Sift in flour, bicarb and baking powder. Mix well. Mix in walnuts.
    2. Spoon into greased loaf tin and bake at 180 C for 50 to 60 minutes.
