    About this recipe: Prawns, scallops and fresh tomatoes tossed into linguine pasta with basil and parmesan. An excellent lunch or dinner. Yum!

    Serves: 6 

    • 150ml olive oil
    • 3 cloves garlic, minced
    • 150g red onion, finely chopped
    • 500g prawns, peeled and deveined
    • 500g scallops
    • 750g linguine
    • 6 plum tomatoes, seeded and diced
    • 8 heaping tablespoons chopped fresh basil
    • 50g freshly grated parmesan cheese

    1. In large pot of boiling salted water, cook linguine until al dente (about 10 minutes).
    2. Meanwhile, in a large frying pan, heat oil over medium-high heat. Cook garlic, red onion, prawns and scallops for 2 to 4 minutes or until prawns are pink and scallops are opaque.
    3. Drain linguine and add to pan; toss well.
    4. Add tomatoes and basil; toss well. Sprinkle with parmesan. Serve.
