Soak cracked wheat in 2-3 cups boiling hot water for 30 mins or till soft. Drain and keep aside.
In a pan, heat 2 tbsp olive oil and add cumin seeds and chopped onions. Stir fry till golden brown. Add ginger, carrots and beans. Stir fry on medium heat for 10 mins. Add peas and stir fry for 5 mins. Add the cooked cracked wheat and toss with the vegetables. Do not mix too well.
Turn off the heat and add peanuts and lemon juice. Mix well. Add salt and pepper to taste. Garnish with coriander and serve hot.
