The Preparation of Orange Muffins on Valentine’s Day


    Come Valentine’s Day and it is a time to celebrate your togetherness with that special person in your life. Here is a simple and special recipe for creating orange muffins This eggless orange muffins recipe has a preparation time of about 15 minutes, a cooking time of 25 minutes and a total time of 40 minutes.

    • 1 tbsp of corn starch
    • 50 grams or ½ cup sugar, refined cane sugar, powdered jaggery or regular sugar can be added.
    • 120 grams or 1 cup whole flour wheat/atta
    • ½ tsp of baking soda
    • ½ tsp of baking powder
    • 1 cup of orange juice
    • 1 tsp of orange zest
    • A pinch of salt
    • ¼ cup of oil
    • 2 to 2.5 tbsp of sugar or add as required
    • 3 tbsp of cocoa powder
    • 2 tsp of orange juice
    • ½ tbsp oil
    • 2 to 2.5 tbsp water or add as required


    1. You will need to seive 1 cup of the whole wheat flour/atta, ½ tsp of baking powder, ½ tsp of baking soda, 1tbsp of corn starch and add a pinch of salt in a mixing bowl.
    2. Put aside the sieved dry mixture.
    3. In order to prepare the orange zest, you will need to grate the zest from one medium orange and keep it aside.
    4. Next, you will need to line a muffin tray with some muffin liners. Preheat the oven at 180 degrees Celsius for about 10 minutes.
    5. Take ¼ cup oil and ½ cup sugar in another bowl,
    6. Simply mix and keep aside.
    7. Using an electric blender, prepare orange juice. Remove the seeds from the segments and then blend. Once done then strain the orange juice though a fine seive. 3 oranges will yield about 1 cup of orange juice.
    8. Next add the 1 cup of orange juice to the sugar + oil mixture.
    9. Do stir briskly untill the sugar dissolves.
    10. Add the orange juice mixture to the sieved dry mixture which had been kept aside.
    11. Then add the orange zest.
    12. Using a wired whisk, stir the mixture to a smooth batter with light hands. Over mixing should be avoided. Now this is the orange cake batter which is ready to be poured in the muffin liners.
    13. Using a spoon, fill the batter in the muffin liners till it reaches ¾ part of the liners. Excess air bubbles can be released by gently shaking the pan. Place the muffin tray in the preheated oven. Bake at 180 degrees Celsius for about 20 odd minuets.
    14. After this the muffins need to cool. These can be served you can serve orange muffins plain or dusted with icing sugar, cocoa powder or prepare any chocolate glaze or icing. The recipe yields 8 regular sized muffins.
    15. Take a small pan and in it add 3 tbsp cocoa powder
    16. Then add orange juice, sugar, oil, cocoa powder and water.
    17. Mix all of it and keep the pan on a low flame on the stove top.
    18. The entire mixture needs to be stirred and thickens a bit. The sugar should also dissolve completely.
    19. While the glaze is still warm, you need to spread it on the orange muffins. The muffins can also be sliced and then the glaze can be spread on the base slice. Having covered with the top slice you can now spread the glaze on the top. It should then be left allowed to cool before serving.


    Finally serve the eggless orange muffins plain for dessert or as a sweet snack in an elegant My Borosil serving plate and make your Valentine’s Day special.
