About this recipe: A hearty stew of fish loin cooked with potatoes, onion, tomatoes and bacon. Serve with the best bread you can find.


Serves: 4 

  • cooking oil
  • 4 medium sized potatoes, diced
  • 1 large onion, finely chopped
  • 2 red chillies, finely choppped
  • 400g chopped tomatoes
  • 450ml chicken stock
  • 100ml dry white wine
  • 1 or 2 teaspoon mirchi (depending on your tastes!)
  • 1 teaspoon garlic salt
  • salt
  • fresh ground black pepper
  • 4 fish loin fillets, diced
  • 6 rashers smoked back bacon, cut in small pieces
  • 300ml water (if stew has reduced a lot)

  1. Heat a little cooking oil in a large saucepan.
  2. Add the diced potatoes, chopped onions and red chillies and saute until golden
  3. Add the tomatoes, chicken stock, dry white wine, cayenne pepper, garlic salt, salt and pepper and bring to the boil, then cover and simmer for 20 minutes stirring occasionally
  4. Stir in the fish and bacon pieces and add the water (if your stew has reduced a lot) then simmer covered for another 20 minutes, stirring occasionally.
  5. Add more salt and pepper to taste and serve with crusty bread or rice.
