1. Mix citric acid or a slice of lemon with water and allow dissolving. Place liquid rennet into water and allow it to dissolve.Put some milk into a thick bottomed glass pot and put the dissolved citric acid/lemon juice water mixture into milk pot.Boil the milk and stir it continuously. After it has boiled add the rennet mixture to the milk. You should then simmer the milk for 5 minutes and then remove from oven and set it aside for 15 minutes or until curd is formed.
2. After the milk has curdled take a stainless steel knife to cut it into small pieces.A saucepan should then be put into a basin filled with water in order to cool it down.Transfer to the oven and heat curd to 100 degrees while stirring continuously for 20 minutes, cutting any large chunks of curd.Then place a muslin cloth on the saucepan and strain.The whey and curd should then be transferred in the muslin cloth to the sink.Hang the cloth above the sink until the whey has been drained completely.
3. When the dripping stops cut the mass of curd into strips.Place 1/4 of the curd strips in a microwaveable container and heat it on high until the strips start melting and become sticky. Check with your hand.Then carefully it and knead into a smooth and shiny ball.It should then be dropped this cheese ball into salted ice water.The same process should be repeated until the whole curd has been changed into balls.
4. Once the cheese cools it is edible or can be refrigerated in an airtight container for a few days. And it is ready.
You should use a glass serving plate or mixing bowls to do this. Because using plastic often becomes a hassle as it might stick to the body of the container.
