Hyderabadi bagara baingan

    • 500 gms brinjal
    • 5 gms turmeric powder
    • salt-to taste
    • sesame oil-150 ml
    • 100 gms onions
    • 5 gms garlic
    • 4-5 nos red chili(whole)
    • 5 gms coriander seeds(whole)
    • 25 gms tamarind
    • 25 gms jaggery
    • coconut-100 gms
    • green chils 3 gms
    • mustard seeds 5 gms
    • curry leaves 10-15 nos.
    • sesame seeds 10 gms


    1. Wash and cut brinjal lengthwise with the stem.
    2. Apply salt and turmeric powder on the brinjal and deep fry in hot sesame oil to make it golden brown and keep aside.
    3. in the same oil, add sliced onions and a pinch of salt and fry to golden brown colour.
    4. add garlic paste and saute for 3-4 mins.
    5. add red chili(whole) and coriander seeds and cook for 5-6 mins
    6. remove from oil and make a paste
    7. put the paste in kadai and add tamarind pulp, jaggery dissolved in little water, coconut , a bit of green chili paste and simmer till gravy thickens.
    8. temper with mustard seeds and curry leaves
    9. arrange the friend brinjal in curry bowl and put the gravy on the top.
    10. garnish with broiled sesame seeds on the top.
