    About this recipe: A salad with a bite to it.

    Serves: 2 

    • 1 cup whole wheat grain pearls
    • 2 cups mint leaves
    • Juice of 1 lemon
    • Finely grated rind of 1 lemon
    • 1 green chilli
    • small piece of ginger (optional)
    • Salt and pepper to taste
    • Cherry tomatoes and mint leaves as garnish
    • 1 cup roasted walnuts

    1. Boil wheat pearls in salted water till they are al dente (firm, neither too soft nor too hard). Drain and keep aside.
    2. In a mixie, blend mint leaves, lemon juice, green chilli and ginger to a fine paste.
    3. Toss wheat pearls and mint paste together. Add walnuts and lemon rind. Add salt and pepper to taste. Garnish with cherry tomatoes and mint leaves.
