450g stewing steak or chicken, washed and diced
2 red onions, chopped
1 clove garlic, crushed
1/2 teaspoon ground ginger
3 Scotch bonnet chillies, seeded and finely chopped
2 tomatoes, diced
100g okra, diced

Heat oil in a pan over medium-high heat and add meat, onion, garlic and ginger. Fry until meat is lightly browned and onion translucent. Remove from heat and add the remaining ingredients. Bring to the boil, reduce the heat and simmer for 25 minutes. Serve with gari or boiled yam.
