    About this recipe: This pudding is cooked with beef fat and is best served with shredded cabbage and mashed potatoes.

    Serves: 6 

    • 225g plain flour
    • 100g shredded beef suet
    • water to mix
    • 8 to 10 rashers bacon (smoked or unsmoked)
    • 1 onion, chopped
    • 1 beef stock cube, crushed

    1. Make the suet pastry by mixing the flour and shredded suet with enough water to form a dough. Set aside.
    2. Trim any excess fat from the bacon.
    3. Take the suet patry dough and roll out quite thinly. Once rolled, place the bacon all over the pastry and sprinkle the onions over the bacon. Sprinkle with the crumbled stock cube.
    4. Carefully roll the pastry, as you would when making a swiss roll. Wrap the pudding in aluminium foil, making sure to seal well. Place in a steamer and steam for 2 1/2 hours.
