    • 1 1/2 quarts water
    • 5 cups thinly sliced carrots
    • 3 tablespoons chopped fresh parsley
    • 2 tablespoons honey
    • 1/2 teaspoon salt
    • 1/2 teaspoon grated orange rind
    • 1/4 teaspoon freshly ground black pepper


    1. Bring water to a boil in a medium saucepan.
    2. Add carrot; cook for 20 minutes or until tender.
    3. Drain well.
    4. Place carrot, parsley, and remaining ingredients in a large bowl;
    5. toss gently.
