Veggie Open Wrap

    Savory, flavorful, and healthy vegetarian wrap.

    • 2 tbsp. olive oil (add more if you prefer)
    • 2 medium sized potatoes
    • 1 small red onion
    • 1 small purple tomato (any tomato that is available to you will work fine)
    • 4 leaves of fresh sage (can be used dry if fresh sage is not available)
    • 1 handful of shredded Mexican Blend of cheese - Sharp cheddar, Monterey Jack, Asadero & Queso Blanco Cheeses (this is available in USA/Canada, but you may use what is available to you)
    • 1/8 tsp. Smoked Paprika (you may use paprika that is available in your area)
    • 2 medium sized flatbreads or flour tortilla
    • 1 avocado
    • 2 slices of soft tofu
    • Salt to taste
    • Hot Sauce
    • 1/4 cup water
    • Pinch of black pepper (according to your taste)
    • 1 tbsp. cream cheese (or butter)
    • 1 tbsp. butter


    1. Heat a non-stick pan at medium heat, then add 1 tbsp of olive oil and add potatoes (cut in round slices).
    2. Cook the potatoes in the oil until they soften and turn pink. Once the potatoes have a pinkish color, add the sage leaves (finely chopped) and 1/4 cup of water and stir it really well and cover until the potatoes have fully cooked and the water has evaporated. Make sure to turn off the heat once the potatoes have cooked and then sprinkle cheese, smoked paprika, and black pepper and cover until the cheese melts.
    3. Place another pan at medium heat. Add sliced onion and some butter. Stir the onion until it becomes soft and then add sliced tomatoes. Bring the heat at high and stir until tomatoes and the onion have cooked thoroughly, make sure the onion has a brown color. Add salt at the very end.
    4. Take the tofu and use the same pan that was used for sauteing the onion. Add 1 tsp. of olive oil. Then cook the tofu for 1 minute on both sides at high heat then sprinkle salt and pepper.
    5. To arrange the wrap, take the flat bread or tortilla and warm only one side in the same pan used for onion and tofu. Then spread cream cheese on the warm side of the flatbread or tortilla, because it will have the oil and spices from the pan. Now arrange the onion-tomato mixture, potatoes with cheese, and avocado and tofu and top with hot sauce.


    Note: You may use the ingredients that are available in your region and there will be no difference in taste. Important Tip: Add some love (very important ingredient in cooking)
