Bharwan Bhindi


    Bharwan bhindi or okra recipe is bhindi stuffed with spice powders. It is a delicious and flavorful punjabi recipe. It makes for an exceptional vegetable recipe with parathas and even simple dal-rice. Bharwa bhindi can also be served as starters.

    • 500 grams Bhindi
    • 3-4 tablespoons oil
    • 2 Onions -finely chopped
    • Ginger-garlic paste
    • 1/2 teaspoon dry mango powder/amchur powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon red chili powder
    • 1 teaspoon turmeric powder
    • 1 teaspoon cumin powder
    • 1 teaspoon garam masala
    • Salt as per taste
    • ¼ teaspoon sugar


    1. Wash the bhindi well and let them dry properly.
    2. Take onions and ginger garlic paste in a bowl. Mix well.
    3. Add salt, red chili powder, turmeric powder, coriander powder, garam masala, dry mango powder/amchur powder, cumin powder and sugar.
    4. Fill the vertically slit gap with the above stuffing masala without breaking the bhindi into two pieces. Stuff all the bhindis this way
    5. Heat oil in a nonstick pan on medium heat. Once hot, assemble stuffed bhindis in the pan. You can assemble 8-10 bhindis altogether at a time.
    6. Cover it and cook it for 12-15 minutes or until bhindi is cooked impeccably. Stir the bhindi in the middle of cooking so that it doesnt stick to the bottom.
    7. Add left over stuffing masala and blend well.


    Make sure to buy long, fresh and dark green shaded bhindis, without any spots or blotches. Sugar will provide sense of balance to the tangy flavor of the recipe without making it too sweet.
