About this recipe: Made with easily found herbs and spices and great with chicken or prawn!

    Ingredients
    Serves: 4

    • For the paste
    • 1/2 teaspoon ground cumin
    • 1 1/2 teaspoons of ground coriander
    • 2 or 3 green chillies
    • 3 teaspoons of minced ginger
    • 4 teaspoons of minced garlic
    • 3 lemongrass stalks, finely chopped
    • 6 heaped tablespoons of freshly chopped coriander
    • zest of 1 lime
    • juice of 2 limes
    • 2 tablespoons of oil
    • Other ingredients
    • 4 tablespoons of oil
    • 200g french beans or sweet peas
    • 200g baby corn
    • 400ml coconut milk
    • 3 tablespoons soy sauce
    • 300g cooked or raw tiger prawns (peeled and de-veined)

    Directions
    Prep:20min  ›  Cook:15min  ›  Ready in:35min

    1. Add all the paste ingredients into a food processor and blend to form a thick smooth paste or chop all the paste ingredients very finely and mix to blend.
    2. Heat the oil to very hot in a wok and stir fry the beans and baby corn for 40 seconds.
    3. Add the curry paste and then the coconut milk and bring to the boil.
    4. Turn down the heat slightly and simmer the curry for 5-7 minutes to reduce the consistency.
    5. Add the prawns and stir for 3-5 minutes. If the sauce becomes too thick add some water. If it's too thin, reduce for a couple of minutes over a moderate heat.
    6. Serve immediately over hot fluffy jasmine rice.

We've made this many times now and it's always a mind-blower! Always best when the green beans are nice and fresh and tender. Made it once with sub-par coconut milk...that was a mistake. Omitted the lemon grass, otherwise followed the recipe. The sauce is soupy buy we just add an arrowroot slurry at the end and it thickens it right up. Will make this again and again and again...  -  25 Jul 2010  (Review from Allrecipes US | Canada)

Delicious! Delicious! Delicious! Followed the recipe accurately except for the quantities, can't weigh out grams of this and grams of that... next time it'll come out a bit different - that's the joy of cooking. I used frozen beans and corn and served on basmati rice. Saved and on my list to make again very soon. Thank you.  -  25 Jun 2010  (Review from Allrecipes US | Canada)
