Makke ki Roti (corn rotis)

    35 mins

This is once again a classic Punjabi recipe that is a winner accompanied with sarson ka saag. There is nothing like sarson ka saag with makke ki roti on a cold winter afternoon! It is a little difficult to make but over the years I have finally learnt it! You may get disheartened trying to roll it with a rolling pin but believe me with a little bit of patience and effort anyone can make it!

    1. Knead the dough with water. If it feels dry you can add a little more water to it.
    2. Divide it into 8 balls.
    3. Roll it out slowly sprinkling some corn flour as you are going along!
    4. Carefully lift it with a spatula and place on a heated pan.
    5. Let one side cook for 2 mins.
    6. Flip it over and let the other side cook for 2 mins.
    7. Put some oil on each side and let it cook some more.
    8. Top it off with butter and enjoy!

I half cook them ahead of time and then I fry them in oil right before serving.
