Breakfast in Bread

    A great dish for when you want to surprise someone special after the excess of Diwali and New Year party nights! I made this really tasty full breakfast to be stuffed into freshly baked bread. Feel free to get fresh bread from the bakery instead.

    Serves: 4 

    • 4 to 6 rashers bacon
    • 4 to 6 traditional pork sausages
    • 6 plum tomatoes. chopped
    • 3 tablespoons tomato puree
    • 2 hard boiled eggs
    • 6 medium closed cup mushrooms, chopped
    • 1 (500g) bag of bread mix
    • 1 table spoon of extra virgin olive oil

    1. Grill or fry your bacon and sausages.
    2. While that's cooking make up your ciabatta dough by following the instructions on the packet. Leave to rise for approximately 25 minutes.
    3. Roll out ciabatta dough to about a 20x30cm rectangle. Spread the tomato puree on top. Chop the cooked bacon, sausage and egg and sprinkle on top along with the mushrooms and tomatoes.
    4. Roll up to form a long sausage shape, then twist round to make a snail shape.
    5. Place on a floured baking tray and place in a pre-heated oven at about 220 C and bake until golden, about 25-30 mins. Great on the morning after a party!!! Enjoy!!!!!
