Vegetable Korma in coconut paste

    A mixed vegetable curry using coconut & onion paste for gravy. Goes well with chapatis or pulao.

    Serves: 4 

    • 3 cups mixed vegetables (Potatoes, french beans, carrots, cauliflower all diced in even size small pieces, green peas shelled)
    • 3 tablespoons fresh grated coconut
    • 1 large onion diced
    • 2 green chillies
    • 1 tablespoon fresh coriander leaves
    • 2 tablesppon butter
    • 1 inch cinnamon
    • 2 cloves
    • 1 cardamom
    • salt to taste
    • 1 teaspoon lemon juice

    1. In a pan add mixed vegetables, salt & 1 cup water. Cover & cook on slow fire till almost done, about 8-10 minutes.
    2. In another pan, cook cinnamom, cloves & crushed cardamom. Heat for few seconds. Grind alongwith coconut, onion, coriander & green chilli to a smooth masala paste.
    3. In another pan melt butter, add ground masala paste and fry well on medium heat. Stir continuously till fat separates.
    4. Add the cooked vegetables, some water as required to make a semi thick gravy. Cook for 3-4 minutes, stirring now and then. Take it off the fire, add lemon juice. Mix well & serve.
