    This is a variation of the classic Milagai podi. My brother and I have always loved garlic, so my mother used to make this version of milagai podi for us.

    Makes: 1 cups

    • 1/4 cup chana dal (split Bengal gram)
    • 8 dry red chillies
    • 2 tablespoons cumin (jeera) seeds
    • 1/4 cup coriander (dhania) seeds
    • 5 garlic cloves
    • ½ cup curry leaves (kadipatta)
    • Salt to taste

    1. Heat 1 tablespoon oil in a shallow frying pan. Fry the chana dal for 5 minutes. Now add the garlic, cumin seeds, coriander seeds, red chilllies, and curry leaves. Fry till roasted and fragrant, about 3 minutes.
    2. Cool the mixture on a newspaper. Grind into a medium-fine powder. Add salt to taste. The powder will keep in an airtight container on the shelf for a few months.
