About this recipe:Lemon rice is a quick and tasty dish that you can make very quickly if you have cooked rice in the house. My mother used to make this for us when we came back from school or on Sundays for a quick lunch. It is delicious and very refreshing. Serve with some plain curd.
2 cups cooked white rice (Sona Masuri or Basmati work well)
5 green chillis (slit in halves lengthwise)
3 red chillis
2 tablespoons chana dal (split Bengal gram)
3 tablespoons urad dal (skinned split black lentils)
1 tablespoon mustard seeds (rai, aavalu)
2 sprigs curry leaves (kadipatta, karavepa aaku)
1/2 cup peanuts
¼ cup raw cashewnuts (optional)
2 teaspoons turmeric (haldi/pasupu) powder
1/4 cup oil
Lemon juice to taste ( 2 – 3 lemons should be enough)
Heat the oil in a large frying pan. Add the tadka in the following order as they need different cooking times - groundnuts, chana dal, urad dal, red chillis, cashewnuts, mustard seeds, curry leaves, green chillis, and turmeric. Add salt and lemon juice.
Add the cooked rice to the mixture and stir thoroughly. Adjust salt and add more lemon juice if you want. If you want the sweet-salty taste, you can also add 1 teaspoon of sugar. My kids like it this way.
