Sabudana Kheer

    This kheer is typically eaten during fasting. It is a simple kheer, not something you serve at a dinner party. When we were little, my mother used to make this kheer for us when we had a cold or sore throat. It is very satisfying.

    Serves: 6 

    • 4 cups whole milk
    • 1 cup water
    • 2 tablespoons sabudana/sago pearls
    • 1/4 teaspoon cardamom (elaichi) powder
    • 3/4 cup sugar

    1. Wash and drain sabudana, keep aside for 10 minutes. Boil the water in a heavy bottomed pan. Add sabudana. Lower heat and simmer for 5 minutes.
    2. Add milk and bring to a boil. Lower heat to simmer. Add sugar and cardamom powder. Cook about 15 minutes, stirring occasionally, till the sabudana is cooked, but not mushy. Ladle kheer into a cup and serve hot.
