Pineapple payasam

    A tasty dessert prepared from pineapple.

    Serves: 4 

    • 1 medium sized pineapple
    • 1 pinch saffron
    • 2 cups water
    • 1 cup cooked yellow moong dal
    • 2 1/2 cups Thick coconut milk (first milk)
    • 1 cup condensed milk
    • Powdered sugar to taste
    • 1 tablespoon Ghee
    • 6-7 Cashew nut

    1. Cut the pineapple into pieces of about 1/2 inch in length. In a vessel, add pineapple and saffron and let cook. When almost done, add moong dal and cook again for about 5 minutes while stirring well.
    2. Now add coconut milk, stir once and let boil. Now add cardamom and condensed milk. Heat until it starts boiling. Add sugar if needed.
    3. Heat ghee in a frying pan, add cashew nut and roast. Pour this mixture into pineapple payasam.
