Curd rice

    This is a soothing rice dish for hot summer days.

    Serves: 2 

    • 1 cup Raw rice
    • 2 cups Butter milk
    • 1 1/2 cup Sour curd
    • 1/4 teaspoon Asafoetida
    • Salt to taste
    • 2 tablespoon Cooking oil
    • 1 tablespoon Mustard
    • 1 tablespoon Fine chopped green chilies
    • 3 Dry red chlies torn into halves
    • 5-6 curry leaves

    1. Cook rice until done.
    2. Add buttermilk to the cooked rice and heat on medium flame. Turn off the flame before buttermilk boils. Mash rice coarsely and let cool. Add curd, asafoetida and salt to rice and mix well.
    3. Heat oil in a pan. When oil is hot enough, add mustard seeds and let splutter. Add cut green chilies, red chilies and curry leaves. Turn off the flame. Pour this mixture onto rice and again mix well.
    4. Serve with mango pickle or coconut chutney and pappad.
