Rajasthani dana-methi mathri

    A savoury snack among Rajasthanis. This is best had with your daily evening cup of tea.

    Serves: 4 

    • 1 cup maida
    • 1 tablespoon dana-methi (coarsely crushed)
    • 1 tablespoon black pepper (coarsely crushed)
    • A pinch of haldi
    • Sal to taste
    • 2 tablespoons ghee
    • Oil for frying

    1. Mix all the dry ingredients and ghee to the maida to make a dough by adding water as needed.
    2. Roll 4 inch puris from the dough. using a small fork, prick the puris - don't make a hole, just a surface prick is fine.
    3. Fold each puri in half and then fold in in half again to make the mathri. Set aside to dry for 10 minutes.
    4. Deep fry the mathris on medium heat. Enjoy fresh!

    You can prepare this a few days ahead of the festival and store for serving.
