    • 250 grams Brinjal
    • 250 grams Groundnet
    • 100 grams Chopped Dry Coconut
    • 2 Teaspoons Red Chilly Powder
    • 1 Teaspoon Salt
    • 2 Onions

    1. 1. Mix Groundnet, Chopped Dry Coconut, Red Chilly Powder, salt and grind it to powder
    2. 2. Wash the brinjals , do not remove the stem , slit them vertically and horizontally like a plus sign(starting from the opposite end of the stem) without breaking them into halves.
    3. 3. Stuff the grinded powder (from step 1) into brinjal slits
    4. 4. Take a frying pan, put the Brinjals in the pan and pour 5-6 teaspoons of cooking oil on Brinjals
    5. 5. Cut onions into small pieces and add them into frying pan
    6. 6. Cover the frying pan with a lid and fry them on stove at a low temperature untill the Brinjals get cooked thoroughly
    7. 7. Serve hot with rice or chapathi
