Heat oil in a pan, put whole garam masala and let it cook for a minute. Add onion, potato, cauliflower and the mangodi. Fry it for some time. Add all the dry masalas and half cup of water. Let it cook till oil separates.
Add 2 cups of water and bring it to boil; add the dry roti and tomato to it. Cook it till roti softens. Garnish it with chopped sping onions and serve hot!

I usually make fresh rotis and leave them out in the sun for 2-3 days to dry.
