Rajasthani roti ki khichdi

    This recipe is an evergreen Marwari comfort food. I'm sure it has been cooked in every house in Rajasthan and that every house has its own versoin of it. I hope you will like mine!!

    Ingredients
    Serves: 4 

    • 4 dry roti (khakara) - crushed into pieces
    • 2 tablespoons oil
    • 1 teaspoon whole garam masala
    • 1medium onion (sliced)
    • 1 medium potato (sliced)
    • 1 cup cauliflower(cut into small pieces)
    • 1/2 cup mangodi (roasted)
    • 1 teaspoon red chilli powder
    • 1/4 teaspoon tumeric
    • salt to taste
    • 1 medium tomato (sliced)
    • spring onion for garnishing

    Directions
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat oil in a pan, put whole garam masala and let it cook for a minute. Add onion, potato, cauliflower and the mangodi. Fry it for some time. Add all the dry masalas and half cup of water. Let it cook till oil separates.
    2. Add 2 cups of water and bring it to boil; add the dry roti and tomato to it. Cook it till roti softens. Garnish it with chopped sping onions and serve hot!

    Make in advance

    I usually make fresh rotis and leave them out in the sun for 2-3 days to dry.
